Favorite Buttercream

After having a bad experience with a shortening based frosting, we've started to just make our own. Also, if you read the ingredients on a canister of frosting, it's not very appetizing. It's really easy to make vanilla buttercream, or a yummy chocolate frosting. I saw the following buttercream recipe on a local Utah TV show. It's actually the recipe that C&H sugar lists on their website here. The only change I make is the addition of almond extract. My friend Amber uses almond and vanilla in her buttercream, so I tried it in this and it tastes great. I thought I would also include our favorite chocolate frosting recipe from Hershey's. It is absolutely heavenly. We also like cream cheese frosting, but all of the attempts have flopped, I can't say for sure if we ever used a recipe for it though. If you have a fool-proof recipe for cream cheese frosting, please feel free to share. (I now need to go whip up some frosting for the sugar cookies Brien made this afternoon.)


C&H Basic Buttercream

1 lb (3 3/4 c) powder sugar
1/4 tsp salt
1/4 cup milk
1/2 tsp almond extract (if you don't have this just increase the amount of vanilla extract)
1/2 tsp vanilla extract
1/3 c butter or margarine (2/3 stick) softened

Instructions:
Combine all ingredients in mixing bowl. Beat with electric mixer or with a heavy spoon until smooth and creamy; scrape bowl often. If it's too stiff to spread add a few more drops of milk. About 2 cups of frosting.


Hershey's Perfectly Chocolate Frosting
(we love this one, original website is here)

1/2 cup (1 stick) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Happy baking!! (Or you could just make up the frosting and eat it straight; I don't judge.)

Have you ever tried adding LEMON extract to that frosting? That's what my family uses...just a few drops to add a little flavor. It is my all time favorite. However, I despise almond flavoring, so perhaps the difference in our tastebuds means you won't enjoy the lemon. But I don't know how that would be possible..it's delish. It's also the key to a great cream cheese frosting.

Yes, we got your cute card in the mail today actually! I was just thinking, how on earth did she get that sent so fast?
The reason I gave you a different address is that we are in the process of moving, but at the moment are still at the original address that you already had. (hope that made sense!)
