Dinner Ideas

With my personal chef out of town for the night I had to (sigh) actually cook for myself (sigh). Brien doesn't cook every night, but I can usually convince him to make dinner when I really don't feel up to it. Well, either he makes dinner or I make a can of soup for myself and allow him to fend for himself. Tonight I was slightly inspired. I made a pizza on a tortilla with pepperoni, tomatoes, mushrooms, onions, olives, and sharp cheddar and mozzarella cheeses. After baking in the oven long enough for the cheese to melt, I folded it in half like a calzone. It was quite tasty.

I now deserve a little dessert. I have some strawberries that I sliced and sprinkled with a bit o' sugar and I plain to eat them with a little bit of Breyer's extra creamy vanilla, and possibly a squirt of Hershey's chocolate syrup (fortified with calcium, so it's like taking a supplement, right?) Ramekins are a great investment because it helps to control the portion size, quite helpful when eating ice cream.

Since a few of you, mainly our parents, have received random phone calls asking, "What are you having for dinner? What do you think I should make?" I thought it would be nice to share one of my favorite easy meals.

Even if it is a quesadilla, it sounds good.

Sounds yummy to me. Especially the strawberries and icecream. I just started South Beach a week ago and I'm missing ice cream and fruit the most. (Although I'm seeing significant weight loss and that's incredibly encouraging).

Yes, this is like a quesadilla, but an improved Italian-American variety that is a very hearty satisfying meal. I say this because when I make a quesadilla it's usually just with the queso, nothing else added.

Amber, South Beach is great. Brien were doing very well on it for a while, then we fell off the wagon when we moved to Ely. Just as a note, I used wheat tortillas, so it is totally an occasional phase 2 meal.
